One of our most popular and successful crops in our kitchen garden is yucca.
This is a crop that originated in the Americas but is now grown mostly in Africa, where it is also known as cassava, manioc or arrowroot. It is used among other things to make delicious yucca chips, flour and tapioca. Its tuberous root is an important world source of carbohydrates and is gluten free, though it does contain arsenic.
